| This is a classic young cheese named after the city of Edam, where this cheese has been made and brought to market for centuries. Edam Cheese was originally made in a ball shape because it stacked well in the holds of the Dutch transport sailing vessels of the 15th century. It has a warm yellow color with a smooth appearance. Delightfully mild flavor, a little dryer than a Gouda, but still creamy in texture. Firm, sliceable, and smooth texture. It is consistently high-quality and easy to use for slicing, grating, cooking and it is perfect for sandwiches. The difference between a Gouda and an Edam is the fat and moitsture contents. Gouda contains 48% I.D.M., and Edam has only 40%. Available in a 4 or 2 pound red-waxed ball, or a 5 pound red waxed loaf. |
