Gouda, Old Amsterdam


Old Amsterdam, one of the richest most flavorful of Dutch cheeses gets its name from the City of Diamonds, Holland's capitol city of Amsterdam. Eighteen months of slow and careful ripening develops its unique character and flavor. Beginning with fresh milk from Frisian Holstein cows, the cheeses are formed into large wheels, and aged on wooden shelves with precise temperature and humidity controls. Each wheel is then gently rubbed and turned daily by hand. The result is an outstanding cheese with buttery flavor and firm, sliceable texture.  With more flavor than Parmesan Reggiano, it's ideal for cooking, melting or grating and it makes a delicious accompaniment to a glass of wine or beer.
