Asiago D'Allevo

Asiago D'Allevo is a half-fat hard cheese made from cow's milk in a flat, cylindrical form with an almost straight border. The smooth rind is slightly brown in color. Golden yellow in color, the cheese is granulous with small to medium size holes. It has a delicate taste when fresh; spicy and savory when aged. Produced in the province of Vicenza, Trento, Padova and Trevisio, it is consumed as a table cheese up to 6 months then used for grating. Aged between five to 12 monhs.
