| Another D.O.C. cheese, it takes it name from the Giulia Alps in Frivli, Italy where it was first produced in the 13th century in a convent. Made from 100% fresh cow's milk, this cheese is round and flat with a smooth clear color which browns slightly when aged. Aged 60-90 days - pale straw yellow in color. Its characteristic flavor is mellow with a full flavored finish. |
