Pecorino Crotonese


Pecorino Crotonese is an artisanal sheep's milk cheese aged in wicker baskets.  This aged cheese has a firm texture and has a sharp flavor with an earthy finish. It is round in form with a golden rind (stained at times with orange and/or purple from the wicker it has been aged in). It often has mold in the grooves which is natural due to its aging process.

It is a creative alternative to other grating cheeses.  Crotonese is produced between the months of January and June when sheep's milk is best and most abundant. Produced in the Village of Nepi, it is aged four months. Excellent shaved or grated.
