| Sottocenere is the invention of Sergio Moro who decided to make a truffle cheese preserved in ashes, as is a Venetian way of preserving cheese. He invented the idea of using various herbs and spices in the ash, and the cheese gradually grew in fam and popularity. Sottocenere al Tartufo has a special leaf on the wheel and the wheel is wrapped in a special paper, tied with string. The texture is softer and the ash is not so dark and thick that it stains the cheese when you cut it. The ash ingredients include nutmeg, cloves coriander, cinnamon, licorice and fennel. The cheese has black truffles in it and the rind is aromatized with truffle oil. |
