| La Panzanella - Like many small businesses began unintentionally. When Ciro Pasciuto came to Seattle from Italy in 1986 he could not find any bread that lived up to his recollections of home. He created a recipe and began making bread for his family and friends. Word spread and, as Seattle's appetite for Italian food grew, demand for the bread quickly increased. In 1997 Ciro's mother came from Italy for a visit. She spent many hours at La Panzanella experimenting with various recipes using locally available ingredients. Side by side she and Ciro developed Croccantini, an herb infused rustic cracker. Croccantini are currently available in the original rosemary flavor as well as sesame, black pepper, and fennel. Simple, fresh ingredients allowed to develop naturally (full fermentation) results in humble, digestible bread. |
