BLUE LEDGE Middlebury Blue Cheese
Vermont's Blue Ledge Farm's newest endeavour is a ripe, runny, pungent little morsel. Middlebury Blue has a dense blue interior and a milder, creamy texture just underneath the rind. Hand-crafted from raw Ayrshire cow’s milk sourced just down the road and aged at least sixty days. Middlebury Blue is distinctly creamy with a sharp blue cheese zing on the front that mellows on the palate.

SHY BROTHERS FARM Hannahbells
Hann!ahbells are tiny artisanal cheeses hand made by the very shy Santos brothers from their third-generation dairy farm in Westport, Massachusetts. Some folks call them thimbles. The French call them “boutons de coulottes”, or “trouser buttons.” The brothers call them Hannahbells, after their mom! Also, ask about Cloumage -a fresh lactic curd made from cows’ milk at Shy Brothers Farm.

Fromagerie du Domaine FEODAL
The Guillaume Tell (named after William Tell) is steeped and washed in a delicious Ace du Vignoble De Lavoie (Rougemont) ice cider. The cider lends the cheese a beautiful brownish colour that resides just under a lightly bloomy rind. This cheese harbours a distinct scent of fermented apple and mushrooms. Its soft texture reminiscent of brie tends to melt into flavours of cream and fermented apple. Pronounced "luh GEEE‐yo‐mmm TELL". Size: 1/2.6#.
