Shy Brothers Hannahbells
Hannahbells are tiny artisanal cheeses hand made by the very shy Santos brothers from their third-generation dairy farm in Westport, Massachusetts. Some folks call them thimbles. The French call them <boutons de coulottes>, or ‘trouser buttons.’ The brothers call them Hannahbells, after their mom! They come in flavors like plain, shallot, lavender, and rosemary and offer an earthy taste in each creamy bite.

Jasper Hill Bartlett Blue
One of the rare offerings from Jasper Hill, the Bartlett Blue is available seasonally from late summer into the New Year. This year they have scaled back production to accommodate production of Bayley Hazen. Consequently, we have been allocated most of their production this season. Bartlett is made from the raw milk of Jasper Hill's herd of Ayrshire cows and is dense and sweet with fine blue veining. This cheese melts like butter with toasty, nutty overtones. |

Italian Caciota di Bosco
This pecorino is sumptuous with a distinct mushroomy aroma and taste brought about by the black truffles dotted throughout it. The long maturation balances the taste of pecorino with the strong taste of truffle. The two flavors harmonize on the palate in a moment of perfection and then fade away, ending with a lingering taste of black truffle.
