Charles Martell moved to Hunts Court Farm in Gloucestershire in 1973 and soon began making cheese with the milk of the heritage breed of Old Gloucester cows. Stinking Bishop is his signature cheese. One of the more pungent cheeses, its strong aroma belies a fruity and refined flavor. Stinking Bishop once featured in Wallace and Gromit’s Curse of the Were-Rabbit. A fan of keeping production small, cheesemaker Charles Martell was shocked to see a 500% increase in demand overnight.
