Milestone Raclette has a natural rind. After brining and being placed on the wooden aging boards the cheese is washed regularly with saturated brine. This allows the development of a healthy living rind which brings flavor to the paste or center of the cheese. Aged between 2 and 3 months, this Raclette style cheese has a unique lactic character while tasting and melting like a traditional raclette.
