A traditional Appenzeller profile with all the hallmarks of master
cheesemaker Walter Rass. The texture is elastic and smooth, with few
eyes and light dappling of crystals. Flavors are balanced on the palate
between warm cream, malt, and dried onion. Perfectly snackable and
approachable yet a truly unique Appenzeller.
